E-Lunch

Our Friday e-lunch is an integral part of the culture of Evolve Systems. Our lunch calendar hangs in the office, reminding everyone when it’s their turn to provide lunch for the office. Every week we walk away from our phones and computers and spend an hour connecting and building relationships around the lunch table.

Some of our clients have had the opportunity to join us for lunch, and they enjoy seeing our staff interact. Topics of conversation can be anything! We try to stay away from work topics to truly give ourselves a chance to recharge and reconnect. Occasionally, however, we’ll brainstorm for awhile and some of our best ideas come out of these lunch sessions.

On the tangible side, lunch preparations can be challenging, as we don’t have a kitchen facility in our office. We have a large Nesco that is put to use often, and we do store a grill out back for the warmer months. However, we have nearly perfected the art of lunch in a crockpot! For example, did you know you can make meatloaf in a crockpot?

Here’s the recipe for a fantastic meatloaf, and it works out perfectly in a crockpot!

Marnie’s Favorite Meatloaf

1.5 lb ground turkey or beef

¼ c. chopped onion

2/3 c. stuffing

1 c. milk

2 eggs

1 tsp salt

1/8 tsp pepper

½ tsp sage

½ c. oats

Mix all ingredients and spread into a bread pan (or crockpot!)

Sauce

6 Tbs brown sugar

½ c. ketchup

2 tsp nutmeg

2 tsp mustard

Pepper

**Marnie recommends doubling the sauce for extra flavor.

Spread sauce over meatloaf. Bake at 350 degrees for 45 minutes in the oven or for 3 hours in a crockpot.

Serve with corn and mashed potatoes. Leftovers make for awesome meatloaf sandwhiches!
